Bean Recipe
Ok.back to the bean recipe…thanks to Dinasour BBQ Restaurant for their book and the model for my bean recipe. Get the book from www.tenspeed.com especially if you also like the homemade pickles as they have a recipe in the book that is close to what I used.
2 T canola oil
1/2 large onion diced
3/4 C chopped green peppers
2 T chopped garlic
2 Cans (28 oz each) Bush’s Original Recipe Baked Beans
1/2 C Season’s Renegade BBQ Sauce (available at Albertsons and Costco) or other thin spicy BBQ sauce
2 T spicy Brown Mustard
3 T cider vinegar
1 t chile powder
1 T of your favorit dry rub (I like my Smokealicious Brisket rub)
1/4 Cup Pure Maple Syrup
Dash tabasco
S/P to taste
Heat oil and the add onions and peppers cooking over medium heat until soft, try not to brown them. Add the garlic and cook another minute. Drain some liquid from the beans then add the beans and all the other ingredients. Turn to low and simmer for 2-3 hours, stirring once in awhile. Taste and adjust seasoning to your liking. These are even better if you can place them on your smoker below some meat to catch the drippings.
